  1. Prepare 1 Cup Sugar Granules
  2. Prepare 1 Cup Pure Ghee (Desi Ghee)
  3. Prepare 2 Cup all purpose flour (Maida)
  4. Take 1/4 Cup Gram flour (Besan)
  5. Take 1 Tablespoon Baking Powder
  6. Prepare 3-4 Cardamom

Steps to make Nankhatai:
  1. Grind the sugar granules and cardamon to a fine powder, keep aside. Preheat the oven to 180 degrees celsius/356 degrees fahrenheit.
  2. Take the ghee in a mixing bowl and whisk ghee for 2-3 minutes, now add powdered sugar into it and whisk the mixture till it become smooth, light, fluffy and creamy.
  3. Now add the following Dry ingredients in a sieve – 2 cup all purpose flour(Maida), 1/4 cup of gram flour(besan),1 tsp baking powder
  4. Add sifted ingredients to the mixture and begin to mix the flour with the creamed ghee with a spoon or spatula.
  5. Gently bring together the whole mixture to a dough.
  6. Pinch medium to large sized balls from the dough. Lightly roll them in your palms and slightly flatten them. Place them in a baking tray. Keep some space between them as they expand while baking.
  7. Press almond almonds on the top slightly. You can also make some criss cross designs on the nankhatais with a fork or toothpick.
  8. Bake the nankhatai in a preheated oven at 180 degrees C/356 degrees fahrenheit for 15-20 mins till cracks appear. Since oven temperatures vary, it may take less or more time. So do keep a check.
  9. Keep on the baking tray for two to three minutes. Then remove them with oven gloves on your hands and place them on wire racks to cool.
  10. When cooled, store the nankhatai in an air tight container.
